New restaurant opening at Hinote's Corner | Whatcom County ...

Here?s a news release about the Cassoulet Restaurant and Cafe, which is having a soft opening on Wednesday, Sept. 5 and a grand opening Wednesday, Sept. 12:

After a long summer, Lynden is excited to welcome Cassoulet Restaurant and Caf? to Hinotes Corner (E Pole and Hannegan roads). Cassoulet (cass-OH-lay) is named after the Southern French peasant dish of duck, sausage, and beans, which its chef, Gabriel Claycamp is well known for, having fallen in love with it in Provence.

Tiffany Hudson, owner, said ?The food at Cassoulet is based on my experiences living in Naples, and Gabriel?s in rural France.? All the food comes from a classic country dishes in France, Italy, Spain, and the occasional tastes of the American South, served mostly family style and using fresh local ingredients.

Cassoulet is a different dining experience altogether. Seating only 40, most guests will eat communally at a big 16 person table. Eat as much as you would like, pass to your neighbor. ?Sit as strangers, leave as friends,? says each menu, as is the defining principle of Cassoulet.

?It?s about building and strengthening a community, and the best way to do that is with good food,? said Hudson.

Entrees are your own, and include unlimited sides from amazing salads, polenta cakes, and greens, to creamy chicken liver mousse (Kind of like meat frosting, says Claycamp), and fried pig?s ears. Entrees change monthly where all sides change daily, with the imagination of the chef and the seasons. Late night on Friday and Saturday will feature up to four different savories, including duck fat popcorn, and up to four sweets. Don?t forget to come for brunch of chicken and waffles with stoneground mustard syrup, shrimp and grits, and bacon cinnamon rolls. Wednesday night is a Family Night, with ?All-you-can-eat? pasta, made fresh in house, board games and music, catering to the younger patrons.

Cassoulet, open for breakfast, lunch, and dinner, Wednesday through Sunday, features several surprises. The biggest surprise is Jim Parker, of Kulshan Brewery and Oyster Bar fame, manning the bar and running the front of house program. Jim brings with him his signature cocktails mastery, hand-brewed sodas, and outgoing, friendly service to Cassoulet.

Vie Sweet brings the other indulgence to Cassoulet ? an artisan style baked goods and pastry program that will rival anything else in the county. With the use of natural leaveners, she brings her amazing style to make everything from classic baguettes and croissants, to Moroccan semolina bread, tarts, chocolates, and more.

Cassoulet has its grand opening September 12th, but is open the week of September fifth for a soft week. Breakfast is around $9, Lunch $12, and dinner, featuring up to 5 courses, is $28, with wine served for $6-$8 a glass. Kids? dinners are $14, and are very welcome, as the Hudson and Claycamp broods feature three children a piece.
